Tuesday Treats: Oatmeal Cream Cheese Butterscotch Bars

Today's recipe is not exactly a cookie, but it's just as delicious! These Oatmeal Cream Cheese Butterscotch Bars are rich and creamy, and will have you rushing through dinner to get to the dessert. One batch yields about 36 bars, so you'll have plenty to share with friends!

 
Here are the ingredients you'll need to get started:

 

Recipe:

Preheat the oven to 350 degrees F. Drape a 9 x 13 inch pan with overlapping pieces of aluminum foil, creating handles for easy removal. Butter the paper, and reserve.

In a food processor, add the flour, oats and brown sugar and pulse to combine. Add the 2 sticks of butter, the cinnamon and the butterscotch chips. Pulse, pulse, pulse until the mixture forms clumps when pressed between your fingers. Transfer the mixture to a large bowl. Press half of the mixture into the bottom of the prepared pan in an even layer, then reserve the other half. Bake in the preheated oven just until slightly golden and set, about 12 to 15 minutes. Remove from the oven and cool completely.

Beat together the cream cheese, condensed milk, lemon zest and juice and vanilla in an electric stand mixer fitted with a paddle, or with an electric hand mixer until no lumps of cream cheese remain. Spread evenly over the baked and cooled oatmeal mixture. Sprinkle the remaining half of the oatmeal mixture over the cream cheese. Bake until the top is golden, about 40 minutes.

Cool and chill before cutting. Run a knife around the edge of the pan, and using the foil handles, transfer the bars to a cutting board. Cut into 2-inch squares with a sharp knife and serve.

I’m so grateful that I have the opportunity to share entertaining ideas, stationery trends, fashion finds, and so much more through The Finer Things. I’m even more thankful for the readers who make it a point to stop by daily, weekly or monthly to see what’s happening on this blog. Whether this is your 500th time or 1st time visiting The Finer Things, I appreciate each and every one of you! The comments you leave really make my day, and I am so flattered when an idea (or image board) is re-posted or stimulates new conversations.

The atmosphere in the office of FineStationery.com is warm and welcoming. We come together every week, not only as co-workers, but as friends. Tuesday Treats: Chocolate Espresso Snowcap

This week's cookie is the Chocolate-Espresso Snowcap -- perfectly paired with a mug of hot coffee at an office holiday party.


Ingredients: 

1/2 cup all-purpose flour
1/4 cup unsweetened cocoa powder
4 teaspoons instant espresso
1 teaspoon baking powder
1/8 teaspoon salt
4 tablespoons unsalted butter
2/3 cup packed light-brown sugar
1 large egg
4 ounces bittersweet or semisweet chocolate, melted and cooled
1 tablespoon milk
Confectioners' sugar, for coating

Instructions:

1. In a medium bowl, sift together flour, cocoa, espresso, baking powder, and salt. With an electric mixer, cream butter and brown sugar until light and fluffy. Beat in egg until well combined; mix in cooled chocolate. With mixer on low, gradually add flour mixture; beat in milk until just combined. Flatten dough into a disk; wrap in plastic. Freeze until firm, about 45 minutes.

2. Preheat oven to 350 degrees. Line two baking sheets with parchment. Shape dough into 1-inch balls. Pour confectioners' sugar (about 1/2 cup) into a medium bowl; working in batches, roll balls in sugar two times, letting them sit in sugar between coatings.

3. Place on prepared baking sheets, 2 inches apart. Bake until cookies have spread and coating is cracked, 12 to 14 minutes; cookies will still be soft to the touch. Cool cookies on a wire rack.

Tuesday Treats: Peppermint Pinwheel Cookies

Today's cookie is the Peppermint Pinwheel Cookie, spotted over at Poca Cosas blog. These minty treats look adorable when wrapped in cellophane like a real peppermint!

Cookie Recipe

1. Beat butter at med. speed with a heavy-duty electric stand mixer until creamy; gradually add sugar, beating until light and fluffy. Add egg and vanilla, beating until blended, scraping bowl as needed.

2. Combine flour, baking soda, and salt; gradually add flour mixture to butter mixture, beating at low speed until blended.

3. Divide dough into 2 equal portions. Roll 1 portion of dough into a 12- x 8-inch rectangle on a piece of lightly floured plastic wrap.

4. Knead food coloring paste into remaining portion of dough while wearing rubber gloves. Roll tinted dough into a rectangle as directed in Step 3. Invert untinted dough onto tinted dough; peel off plastic wrap. Cut dough in half lengthwise, forming 2 (12- x 4-inch) rectangles. Roll up each rectangle, jelly-roll fashion, starting at 1 long side, using bottom piece of plastic wrap as a guide. Wrap in plastic wrap, and freeze 4 hours or up to 1 month.

5. Preheat oven to 350°. Cut ends off each dough log, and discard. Cut dough into 1/4-inch-thick pieces, and place on parchment paper-lined baking sheets.

6. Bake at 350° for 6-7 minutes or until puffed and set; cool cookies on baking sheets 5 minutes. Remove to wire racks, and cool completely (about 30 minutes).


Frosting Recipe

Beat butter and cream cheese at med. speed with an electric mixer until creamy. Gradually add powdered sugar, beating at low speed until blended. Increase speed to med., and gradually add milk and peppermint extract, beating until smooth.

Place Peppermint Frosting in a heavy-duty zip-top plastic freezer bag. Snip 1 corner of bag to make a small hole. Pipe about 2 tsp. frosting onto half of cookies; top with remaining cookies, gently pressing to form a sandwich.

"Pickles & Ice Cream Cupcakes"
  • 1 cup flour
  • 3/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. ground dill
  • 1/2 tsp. salt
  • 1/4 tsp. onion powder
  • 6 tbsp. butter, room temperature
  • 1/3 cup sugar
  • 1 egg
  • 1/3 cup sour cream
  • 1/3 cup dill pickle juice (from the jar)
  • 1/3 cup finely chopped dill pickles

1. Whisk flour, baking soda, baking powder dill, salt and onion powder in a med. sized bowl.

2. Beat butter and sugar in a large bowl until light and fluffy.

3. Beat in eggs and sour cream until blended.

4. Alternately fold in flour mixture and pickle juice, beginning and ending with the flour.

5. Fold in the chopped pickles.

6. Fill cupcake liners 3/4 full, then bake at 350 degrees F for about 25 minutes.

7. Once completely cooled, place a scoop of vanilla ice cream on top, complete with a dill spear.

A Personal Thanksgiving

Put the "thanks" back into Thanksgiving this year with a very personalized holiday feast. Thanksgiving is a time to be thankful for family and close friends, love, health, laughter and fun. Collect your own, or ask guests to send you copies of their most cherished photos. Photos can reflect events that occurred during the last year (weddings, babies, parties, milestones), or can be portraits of past and present family members and friends. Arrange the photos in frames, or loosely stand them up amidst a fruit or floral display as your Thanksgiving table centerpiece. For decor on the table, mantle or staircase, secure tiny slips of paper printed with things you are thankful for to a long string or piece of twine -- Southern Living

Thanksgiving Cupcakes to Gobble Up

While the grown-ups sit down to pumpkin pie and coffee after the Thanksgiving feast, kids will have more fun gobbling up these cute turkey cupcakes.

Materials:

  • Nutter Butter cookies (1 for each cupcake)
  • Double Stuffed Oreos (1 for each cupcake)
  • Chocolate cupcakes, baked and cooled
  • Chocolate frosting
  • 1 tube red or orange icing
  • 1 tube yellow icing
  • 1 tube black icing
  • Candy corn (8 pieces for each cupcake)
  • 1 sheet brown cardstock
  • 1/2 sheet yellow cardstock
  • Glue
  • Tape

Instructions:

Bake and frost the chocolate cupcakes.

Cut a strip of brown cardstock (1 strip for each cupcake) about 1.25 inches wide by 10 inches long. This will wrap around the cupcake to form the turkey's body.

Cut 2 turkey feet for each cupcake from the yellow cardstock. To do this, cut legs about 1 inch tall with a triangle at the end. Then, cut out 2 smaller triangles from the triangle base. Glue the legs with feet to the brown base.

Wrap the base around the cupcake, taping it into place.

Push 8 pieces of candy corn into the Oreo, fanning out over 2/3 of the Oreo.

Add a beak, eyes and a gobbler to the Nutter Butter cookie with the colored icings.

Press the decorated Nutter Butter cookie into the frosting on top of the cupcake with the Oreo behind it.

Happy 150th, Pony Express!

{The Finer Things is taking a little break from weddings this Thursday to bring you an interesting history lesson, but we'll be back tomorrow with a gorgeous wedding post!}

William Arthur's wonderful blog posted {this} today, and I am so glad they did! 2010 marks the 150th anniversary of The Pony Express -- a mail service that crossed the Great Plains and the Rocky Mountains, bringing letters by horseback to eager recipients. How neat would it be to finally hold a letter in your hands after it traveled approximately 2,000 miles with various couriers on horseback?

Here are a few interesting tid-bits about The Pony Express that William Arthur shared on their blog:

- The pay for riders was $100.00 a month.
- New riders took over every 75-100 miles in a relay.
- Riders got a fresh horse every 15 miles.
- Horses traveled only 10 mph.
- The Pony Express ran day and night, summer and winter.
